Schil de appels en snijd ze in blokjes. In een koekenpan de boter smelten en er de appelblokjes in bakken tot ze goudbruin zijn. Vervolgens de suiker erbij doen, de kaneel en de saffraandraadjes. De appels een paar minuten zachtjes laten stoven tot ze karamelliseren en ze daarna apart zetten. Dan de deegblaadjes naar voorkeur in een ronde dan wel een vierkante vorm snijden.   1. Verwarm de oven tot 190 graden.

  4. Breng op smak met peper en zout.
  5. Besprenkel een ovenschotel met olijfolie en plaats de tomaten hierin.
  6. Vul de tomaten met het gehaktmengsel en verdeel de tijm erover.
  7. Besprenkel met olijfolie en plaats ongeveer 35 minuten in de oven.
  8. Haal de schotel uit de oven en werk af met fleur de sel, zwarte peper, tomaten vinaigrette en basilicum olie.
  9. Spuit de andaluse over de tomaten, zoals op de foto.

  3. Verhit olijfolie in een pan, voeg de koppen en schalen toe en laat het op hoog vuur aanbakken. Roer wel regelmatig om.
  4. Flambeer met cognac om de schalen bros te maken en blus af met de kippenbouillon.
  5. Voeg de witte wijn, sjalot (fijngesneden), knoflook (fijngesneden) en peterselie stengels toe en laat op laag vuur inkoken tot een derde.
  6. Voeg de room toe en laat opnieuw inkoken. 

SOEP:

  1. giet de soep door een zeef en draai het vuur laag.
  2. De soep mag slechts zacht pruttelen.
  3. Pocheer er de langoustines net gaar in. Voeg eventueel bouillon toe (4 pers= ± 7½ dl)

Bereiding:

·PISTACHEPESTO

  1.  maal de knoflook en de lichtgeroosterde pistache fijn.
  2. Voeg basilicum, dragon, bladpeterselie toe en maal verder tot de kruiden zacht zijn.
  3. Voeg de parmezaansekaas toe, vijzel/maal nog kort en schenk daarna olijfolie erbij tot de pesto een dikke structuur en smeuïge substantie heeft.

  5. Zet de opgerolde linten strak in een pannetje, schenk het stoofvocht erop en houd dit warm

KALFSENTRECOTE

  1. prepareer de entrecote, verwijder vliezen en vet.
  2. Snijd het vet in zeer kleine dobbelsteentjes en bak uit als kaantjes.
